Kalam polo Shirazi is a local dish of Shirazi, which is among the list of famous Persian dishes. This dish is a combination of lunar cabbage, onion, rice, minced meat, chickpea flour, spices, and aromatic vegetables such as leek, basil, tarragon, and dill.

Shirazi cabbage pilaf is one of my favorite dishes and I recently served it for parties and everyone praises this dish.

I have explained the Shirazi cabbage rice recipe in the previous parts, but in short, you fry the cabbage with onions and different spices and cook it with rice and local vegetables.

In the other part, we prepare and fry the minced meat and then pour it on the rice and serve.

In addition to Shiraz, this local dish is served in all the cities of Iran, and it is one of the most popular healthy dishes. This dish is served with yogurt cucumber and Shirazi salad.

2. Ghanbar polo Shirazi

Ghanbar polo Shirazi is one of the famous Iranian dishes, which is very popular among American people in addition to Iran.

Usually, Iranians living in America prepare ghanbar Palo for Eid Nowruz night food, which is very suitable for parties and gatherings.

This dish is made from a combination of walnut kernels, onions, pomegranate paste, and raisins that are fried together and fried minced meat is added to this combination.

Then this layered composition is mixed with cooked Iranian rice and served with yogurt, cucumber, yogurt, and shallot.

The taste of ghanbar polo is sweet and sour due to the presence of pomegranate paste.

3. Dopiazeh aloo

To prepare Shirazi Dempakhtak, first, we cook the lentils. Then we fry chopped carrots and cabbage with onions and different spices. Then we add the lentils to this mixture.

These ingredients are combined with Iranian rice and cooked, and dampokhtak Shirazi is ready.
This dish is eaten with mast o khiar, and Shirazi salad.

5. Havij polo

Another famous and colorful dish of Shirazi is the Havij polo. This dish has a sweet taste and its taste is very close to shirin polo.

Havij polo is prepared from a combination of rice with fried carrots, sugar, fried meatballs, cinnamon, and brewed saffron.

The recipe for this dish is as follows, chop and fry the carrot and add a little sugar to it. In another dish, fry the meatballs. Add carrot, onion, and fried garlic to the meat and mix it layer by layer with rice.

We boil the rice and Shirazi rice pudding is ready. You can serve this dish with zeytoon parvardeh, mast o khiar.

Eshkeneh is one of the famous and authentic Iranian foods prepared in different ways in Shiraz, Tehran, and Isfahan.

Eshkeneh Shirazi, one of the light and inexpensive dishes, is prepared with potatoes, special vegetables, flour, and eggs.

The way to prepare eshkeneh Shirazi is to fry the onion, add the chopped potatoes, fry a little, and then add the flour.

Then we add the vegetables and fry them and add water so that all the ingredients cook together.

Finally, add the egg and let it cook for a few minutes. When the water is reduced, eshkeneh Shirazi is ready and you can eat it with Iranian bread and enjoy it.

Ashe sabzi Shirazi(Shirazi vegetable soup) is one of the traditional and old Iranian soups in Shiraz, which is often used as an offering in gatherings.

Ashe sabzi is very nutritious due to the presence of mutton and legumes, it is considered one of the best options for breakfast on a winter day.

To prepare this, we first soak the beans the night before and then cook them with water and salt. We cook the meat separately with onions and spices and then add it to the soup along with cooked rice and roasted vegetables.

Finally, after adding tarragon and mixing the ingredients, the soup is settled and decorated with curd and fried dry mint and onions.

10. Shekar polo

Rice, sugar, butter, barberry, almond slices, pistachio slices, saffron, and rose water are the ingredients of this delicious pilaf.

Shekarpolo or Sugar pilaf is usually served with khoresh gheymeh.

    It is a very spectacular city with many historical monuments
    But the best food I ate was Kalam Polow
