Secret of Delicious Loobia Polo Recipe | Green Bean Pilaf

A traditional Iranian pilaf made with green beans, rice and meat

Loobia polo is the best dish that my wife Mahsa makes. The magical combination of beans, greens, minced meat, and tomato paste is amazing.

A bunch of foods gives a strange and good feeling, which is better than a thousand alcoholic drinks. Beans and pilaf are the most wonderful dishes that I like.

Loobia polo is known as Iranian mixed polo. This pilaf and Adas polo are two of the most delicious and excellent Iranian pilafs.

Loobia polow is prepared from a combination of Persian rice with green beans and minced meat or chopped meat.

The popular Iranian pilaf is made with tomato paste and various spices such as cinnamon powder, cumin powder, turmeric powder, thyme powder, black pepper, and garlic powder.

The taste of this pilaf with lamb is popular because of the spices that are used in it. If we use less and inappropriate spices, its taste will not be very pleasant.

 Ingredients:

Rice                                                                                    3 cups
Salt and black pepper                                                      optional
Sheep thigh (chopped into tiny pieces)            14 ounces
Cinnamon stick                                                                                                 One small piece 
Onion (chopped)                                                              One piece
Medium onion                                                                One piece
Turmeric powder                                                             2 tbsp
Tomato paste                                                                    2tbs
Fresh green beans (chopped)                                       9 ounces
Cinnamon powder                                                         1 tbsp
Saffron (brewed)                                                            2 tbsp
liquid oil (for frying)                                                       optional
Enough pieces of Lavash (Persian flat bread) to cover the bottom of the pot (or an 8-inch flour tortilla cut into six wedges)  

 

Instruction :

1. Soak the rice in water and salt for 1 to 3 hours, then empty the water on it while cooking.

2. Pour the liquid oil into a saucepan and put it on medium heat. When the oil becomes hot, pour the chopped onions and fry it until well golden brown.’

3. Now pour salt, black pepper, Turmeric powder, and Cinnamon powder into a saucepan and immediately pour the chopped sheep tight. Saute them until they are fried well.

4. You should add fresh and chopped green beans now and saute with other ingredients in a saucepan.

5. At this time, add tomato paste and let it fry in oil with other ingredients until it gives the color and the oil becomes somehow red. Now, put it aside.

6. Pour water into a pot and put it on high heat. When it boils, pour the rice in it for 7 to 14 minutes until it is ready, then pour it in a colander and put aside.

7. Pick up a pan and pour oil in it. When it becomes hot, cover the bottom of the pot with pieces of Lavash bread.


8. Now pick up the pot from the heat and start pouring layer by layer rice and the prepared ingredients before, until the last layer that you should covered with rice.

9. Put the lid on the pot and increase the heat until the rice steam rises. Now you should pour the brewed saffron on the rice, put the cinnamon stick on it, and put the lid on the pot again. Then, decrease the heat to low and let it cook for 45 minutes to 1 hour.

10. After cooking, pick up the cinnamon stick from the top of the rice, pour the rice into the Intended dish, decorate it with saffron rice and Tahdig, and serve.
