With the advent of Islam, traditional Persian rice pilafs became one of the most popular dishes in Islamic circles and were used to entertain guests. Also, this food was used in the Safavid Empire and the Qajar period in the following periods.

In international conventions related to preserving traditional foods, this food is known as one of the most popular foods in the Middle East. It is included in the list of UNESCO World Cultural Heritage foods.

Rice 5 cups
Medium chicken breast Two pcs
Minced meat (if you want to make shirin polo with minced meat) 1.1 pound
Medium carrot Three pcs
Brewed saffron Three tablespoons
Butter 1.7 ounce
Sugar 1 cup
Orange peel slices 3.5 ounce
Sliced almonds 3.5 ounce
Pistachio slices 1.7 ounce

Salt, pepper, and turmeric powder as needed

Saute pistachio and almond slices in a little butter. Grate the carrots with a coarse grater.

In the second step of preparing this Persian dish with chicken, you should cook the chicken with two onions, water, and good spices.

After cooking the chicken, strain the chicken broth and keep it. Mix 1 cup of this chicken broth with sweetened orange peel and brewed saffron.

Chop two onions and fry them until golden. When the onions are golden, shred the cooked chicken and add them to the onions. Fry the chicken well with the onions until they are fried. Add the roasted carrots.

Add chicken broth, orange peel, and brewed saffron in the last step. And add salt, pepper, and turmeric in the middle of frying. Allow the chicken broth to evaporate.

4. Combine ingredients with rice

Cook rice in water and drain. Now pour oil on the bottom of the pot and let it get hot. Then arrange your desired ingredients for tahdig and add a layer of rice and a layer of fried chicken.

Leave this traditional pilaf to cook. At the end of the brewing time, pour the roasted slices on the pilaf and serve the food. If you want, fry some barberry and pour it on the rice when serving.
