A crispy and delicious Iranian appetizer: Persian samosas
Persian sambooseh is a very quick, delicious, and slightly spicy dish. The city of Abadan in the south of Iran is the origin of this food.
Samosas is a very famous street food that was taken from India and is also sold on the streets of Iran and Pakistan.
This dish combines boiled potatoes with vegetables and onions, mixed with different spices, wrapped in lavash bread or special dough, and fried in oil.
It is prepared in different ways in different countries of Asia and India, and finally, it is served with different ketchup sauces or local spicy sauces.

Instruction:
1. To prepare samosas, I first put the potatoes in a pot and add water to boil slowly.
2. Then, I chop an onion into small and precious sizes. Then I fry the onions in oil, and add turmeric, paprika, black pepper, and salt.
As the onions are slowly fried with spices, I fry the remaining potatoes in another pan.
If you want to cook potatoes faster and with less oil, you can fry them in an air fryer without or with very little oil.
3. I mix the fried potatoes with onions and keep them aside.
4. At this stage, I clean and chop parsley and coriander. I chop them like in the picture, take a desired amount, and pour it into the onion and fried potato mixture.
5. At this stage, I mash the boiled potatoes and mix them with olive oil, salt, black pepper, and the rest of the parsley and coriander. I will mix it completely.
6. After making the inner mixture of the samosa, we will start cutting the lavash bread. We cut the lavash bread into uniform and regular rectangles.
We put the Persian samosas mixture inside the bread. Then, we wrap the lavash bread in a very simple and regular shape.
7. Then pour the oil into the frying pan, allow it to heat up completely, and slowly put the samosas in the oil until they are completely fried.
This Iranian appetizers should not be fried too much, and when they are golden brown, they are ready, and you can eat them.
Topping and Serving :
Usually, in Iran, samosas are served with hot or regular ketchup sauce. They also use a variety of carbonated drinks.
In the south of Iran, in Abadan, spicy mango sauce and Iranian pickles, such as lite pickles, are also served with this dish.
In India, Indian stamp sauce is also used with this delicious sandwich.

You can use the oven to cook a healthier and less caloric samosa. Follow all the steps as before, apply a little oil to the samosas with a brush, and put them in the oven for 15-20 minutes at 195 degrees Celsius.
With this method, you can prepare almost military and very tasty samosa.
How to make Persian samosas dough at home
- First, put the dough liquid in a small container with half a glass of lukewarm water until it foams and is ready.
- In another container, mix flour and salt well and sift.
- Gradually mix the dough with flour and salt.
- Add the oil to the flour mixture.
- Knead the Persian samosas dough with your hands.
- Divide the samosa dough into small and equal pieces.
- Ball the pieces of dough and cover the dough for 60 minutes until it rises or increases in volume.
- After forming the dough, open the balls with a 3 mm-diameter rolling pin.
- Put the prepared Iranian appetizer ingredients inside the opened dough and wrap the dough.
- Fry the wrapped samosas in oil.
