Best Koloocheh Fooman Recipe | Persian Fuman Cookies
Koloocheh fooman(Persian Fuman cookies) is one of the traditional Iranian cookies. As the name suggests, this delicious cookie is for the city of Fuman in Gilan province in northern Iran.
This cookie is made from flour, eggs, butter, milk, and sugar and has very delicious middle ingredients of cinnamon powder, walnuts, and sugar.
One of the traditional souvenirs of Fuman City is this Persian kooloocheh(Persian Fuman cookies). Along with this koloocheh served Persian tea.
I have used cookies personally since I was a child. A glass of milk with cookies was one of the snacks that my mother prepared for me at 10 a.m.
I have not forgotten the taste of cookies from the old days. One factor in my rapid growth as a child was eating cookies with fresh cow’s milk every day.

Ingredients for Dough fuman cookies:
Flour | 3 cups |
Sugar | 1 tbsp |
Liquid dough | 1 tbsp |
Melted butter | 2.5 ounces |
Salt | a little |
Egg yolk | 1 pcs |
Milk | 1 cup |
Ingredients for Kooloocheh Fooman middle ingredients:
Ground walnuts | 7 ounces |
Sugar | 7 ounces |
Melted butter | 1.7 ounces |
Cinnamon powder | 1 tsp |
Vanilla | 1 tsp |
Cardamom powder | ½ tsp |
Ingredients for covering the koloocheh fuman:
Egg yolk | 1 pcs |
Sesame seeds | optional |
How to make Koloocheh fooman(fuman cookies)?
Instruction:
Step 1: preparing the dough
First, pour the lukewarm milk into a bowl, add the liquid dough with sugar to the milk, and mix until the liquid dough is ready.
Then, sift the flour with salt in another container, pour it into the container, and add the melted butter and egg yolk.
Mix the flour, stir, add the prepared liquid dough to the flour and other ingredients, and knead until the dough is obtained. Cover the dough and give it time to change its volume.
Step 2: Preparation of middle ingredients for koloocheh fooman:
To prepare the middle ingredients for this sweet, it is enough to combine and mix all the ingredients until they are uniform and ready. At the end, set it aside to use in the middle of the Persian cookie.
Step 3: Dividing the dough
When the volume of the dough changes and it is ready, sprinkle flour on the work table, put the dough on the work table, knead the dough a little, and then divide the dough. Try to keep each part on the same size.
Step 4: Shaping the koloocheh fooman
Take one of the parts of the dough and spread it in your hand. Put 1 spoonful of the prepared middle ingredients on the dough and cover the ingredients with dough, collect the dough, roll it into a ball, and spread it again a little.
Stamp the cookie with a stamp or draw a design on the cookie with a fork or a pen. In the same way, prepare all this sweet.
Step 5: Preparing the cookie
Take a bowl and mix egg yolk using a mixer, then use a pastry brush to apply it on the Persian Fuman cookies. Sprinkle black seeds on this cookie and place them on a baking tray lined with greaseproof paper.
Step 6: Baking cookies
Turn on the oven and let it heat up for 20 minutes at 300-390 Fahrenheit. During this time, give these cookies time to rest a bit, and then put the tray in the oven and allow it to cook for 20-30 minutes.
After baking, your koloocheh is ready. After a bit of cooling, they are ready to serve.
