Pomegranate is rich in polyphenols, which are powerful antioxidants.

The antioxidants in fruits can help reduceTrusted Source levels of reactive oxygen species (ROS), a type of free radical, in the body.

The body produces ROS during metabolism and other processes. Exposure to toxins, such as tobacco smoke, can also increase ROS levels.

High levels of ROS can lead to oxidative stress, resulting in cell damage and inflammation. Oxidative stress may contribute to metabolic disease, cancer, and other health issues. Antioxidants help remove ROS from the body.

The antioxidants in pomegranate juice can help remove ROS and protect the body from damage.

Health Benefits

It can be safely said that Fesenjoon is one of the most nutritious and characteristic Iranian stews.
Because it contains walnut powder and pomegranate paste, it has energy and many vitamins. The vitamins in walnuts include vitamin E and vitamin B.

Walnut releases oil when it cooks, and most people think that walnuts are a very fatty food. However, walnut oil is good for the body except for cholesterol, and it has very little bad cholesterol.

Pomegranate paste also has blood-forming and antioxidant properties, and this substance is used in large quantities in this excellent stew.

Finally, in this stew, meatballs or chicken meat are used, both of which are excellent sources of protein. Usually, meat or chicken are not fried in this stew and they do not lose their essence and vitamins by cooking in the stew water.

So we come to the conclusion that we are dealing with an extremely healthy stew for the body, and you should enjoy eating this stew and consume it safely.

Cooking Tips

  • Roasting walnuts doubles the aroma of walnuts, and their texture becomes more suitable.

  • Cooking khoresh fesenjan with milder heat and a longer cooking time makes the stew better.

  • If the pomegranate concentrate is watery, increase its amount by 2 to 3 times.

  • The amount of sugar for the taste of a meal depends on the sourness of the pomegranate concentrate, so don’t pay attention to the given measure and get the desired taste by your taste.
  • Instead of pouring a lot of water into the stew at the beginning, try to make the stew less watery, and every time it needs water, pour a glass of cold water into the pot and keep doing this until the stew becomes ready.

  • If the chicken meat is fully cooked but the stew is not, take it out of the pan, and when the stew settles, add the chicken to it again.

  • To measure the sourness of the stew, add pomegranate concentrate little by little, taste the food again after 15 to 30 minutes, and add pomegranate concentrate again if needed.
