Quince 2 to 4 pieces
Meat 250 gram
Almond and pistachio slices  as needed
Barberry as needed
Spices ( Salt, black pepper, paprika, turmeric, cinnamon) as needed
Butter  as needed
Tomato paste 1 tablespoon
Plum  10 pieces
Saffron  as needed
Onion 1 piece

Instruction:

1. At first, we cut a little bit from the quince end, like the picture below,

so that it stands straight, and then we empty them with scoop spoons. Try to choose the same size quinces.

2. For the ingredients inside this dolmeh, which is a little different from other dolmeh. First we wash, peel and chop an onion.

Take a suitable frying pan and pour oil into it, and then add the chopped onions and fry them until they turn golden.

It is better to use butter instead of oil for frying, but if it is not available, Using oil is not a problem.

3. After the onion is fried, we add turmeric, cinnamon, and the meat. We chop the meat very finely in advance because the meat should not be large and cook slowly. So we fry the meat and add a little paprika.

4. We have to roast until the color of the meat changes, then we add a little water and let the meat cook. The water we add should be boiling water.

Until the meat is cooked, we wash the almond and pistachio slices and leave them to dry, then put a little butter in a small pan and put it on a low heat.

5. After the butter melts, add 1 spoon of tomato paste and saute it in the butter. Then, add sliced almonds and pistachios and saute until they are raw and removed. Meanwhile, wash the barberries and let them dry.

6. After the meat is cooked, add the mixture of sliced almonds and pistachios to the meat, and at this time, add pepper, salt, and a little cinnamon if you like. We also add barberries to the meat.

Keeping the barberry on the heat with the meat for a long time is unnecessary, so we remove it from the heat and prepare it to fill the dolmeh.

7. We take a small spoon and fill the dolmeh with meat mixture. We should pre-soak a few plums and brew saffron in advance or mix it with ice to give it color.

At this level, after putting quinces dolmeh in a pot, add plums and saffron. (Note that we also pour the water from the plums that we soaked.)

8. Close the pot and let it cook completely. If you like the taste of fried onions, add some pre-fried onion to the mixture and let it cook. Because quinces cook soon, you should be careful and remove it from the heat after cooking.

9. The dolmeh is ready, and you can serve it in your desired dish and enjoy eating it with your family. dolmeh beh is served with: Persian pickles and sabzi khordan with nan sangak.
