7. At this stage, we place the muffin mold in the middle of the oven and let it cook for 10 to 15 minutes. When the cakes are puffed up, reduce the oven temperature to 180 degrees and allow another 10 to 15 minutes until the cakes are golden and cooked.

At the end, we remove the mold from the oven and let the cakes cool down; then we put them in the dish we want.

Traditional Significance and Serving

Baking this Saffron cake is connected with customs and rituals in Yazd, and serving it in most religious ceremonies, funerals, weddings, and Nowruz Eid, along with Persian tea, Nan Nokhodchi, Kolompeh, is an obligatory part of the reception.

Yazdi cakes are light and not too sweet. The cardamom and rosewater give it a distinctive Persian flavor. They are best served with hot tea or coffee.

  • The correct size of ingredients is very important for making Persian cupcakes. Carefully measure and prepare all the ingredients in advance. Then start making the cake batter.
  • The eggs, milk, yogurt, and butter you use for this traditional Iranian dessert must be at room temperature. Take them out of the refrigerator after half an hour.
  • Follow the order of mixing the ingredients. Mixing this order may cause your cake to harden.
  • If you pour the cake ingredients directly into the mold, you must grease it, but try not to put too much oil around it because the cake absorbs this oil and lowers its quality.
  • Before the cakes are cooled, do not stack them on top of each other because the heat in them will make the texture of the cake dough.
  • Observe the baking time of the cake. If it stays in the oven for 20 minutes, do not open and close the oven door for 20 minutes because this will make the puff cake fall asleep.
  • Try to pour the ingredients of this sweet into the mould immediately after preparing it and put it in the oven. The longer the time between preparation and placing in the oven, the less puffy your cake will be.
  • Traditional Yazdi cake can be made in different ways, such as how to make chocolate cake and how to make two-color this sweet.

  • The use of honey makes this cake more colourful
  • If you use yogurt, you should use thick yogurt.
  • Suppose you see that the edges of the cakes are puffed and baked, but the middle of them is not puffed. In that case, it is because the cake batter has waited a long time to go into the oven after being prepared (it should be immediately after adding the ingredients and mixing). Pour the batter into the mould and put it in the oven.
  • Adjust the temperature to 20 degrees lower for electric ovens and toasters.
  • If you can’t put all the molds in the oven together, cover the rest of the ingredients and leave them at room temperature. Fill the first mold that you took out of the oven with the remaining ingredients and put it in the oven.
  • The oven temperature should be just below.
  • To achieve this sweet with cracks, be sure to follow the two-step baking process: first, high temperature and then low temperature.
