Torshi Hafte Bijar Recipe Step by Step Guide +5 Tips

Torshi hafte bijar is one of those pickles that can be found in the homes of the people of northern Iran. Usually, sir torshi and torshi haft bijar are a staple on the table of people in the country’s north.

As a child, I always waited for the fall season to come and make pickles in the yard.

The smell of cabbage and vegetables filled the whole yard. As children, it was very enjoyable for us to gather together and make this pickle.

But, unfortunately, we don’t have time with today’s lives anymore, and we have to buy pickles from markets. But in this article, I brought a recipe to easily prepare torshi hafte bijar at home and enjoy it.

Torshi hafte bijar Ingredients:

Pickled vegetables including (tarragon, savory, mint, coriander and parsley)  200 grams
pickled potatoes 3 pcs
Celery a stalk
Cauliflower 1 medium
Carrots 4 medim pcs
Cucumber 6 mediun pcs
eggplants 3 pcs
Hot green peppers 100 grams
White or red vinegar as needed
Coriander seeds  3 tablespoons
Turmeric powder 2 tablespoons
Black seed 2 tablespoons
Salt 4 to 5 tablespoons
Garlic  3 cloves


1. First, we wash all the ingredients such as cauliflower and eggplant to cucumber and carrot. Then we cut them into suitable sizes.

I let all the ingredients dry completely, and I make sure they are completely dry. For better drying, we take a large clean cloth, pour the ingredients on it and put it in a colander to dry.

2. Then after drying, chop all the ingredients into suitable pieces.

3. Then we put the vegetables together in a food processor or chop them. I put it in a food processor, which is easier. I also separate the celery stalks and eat the celery leaves with the vegetables.

4. Put all the chopped ingredients in a large container and sprinkle coriander seeds, black seeds and salt on them and mix well with a spoon until all the ingredients are combined. Mix all the spices we have and mix with the ingredients.

5. We bring the container or containers that we have completely washed and dried beforehand. I use plastic containers with lids that are transparent and the inside is clear. Then we add the mixed ingredients to the container little by little.

We press them with our hands to reduce the distance between them. Then we pour vinegar on the ingredients until the container is full.

6. Close the lid of the pickles completely so that air does not penetrate into them. Place the containers in a dry and cool place away from sunlight. After a week to 10 days, your Torshi Haft Bijar is ready and you can drink it.

In Iran, pickles are usually served with any Persian food. In restaurants in northern Iran, you can see pickles next to all the dishes. torshi haft bijar is usually used with rice dishes.

Very common foods are various types of pilaf, abgoosht, and kale pache. You can eat this pickle as part of a mezze platter.

  • The most important point in preparing this pickle is to wash the ingredients and more importantly, to dry them. If the pickle ingredients are not completely dry, it will cause the pickle to mold
  • After using the pickle, do not return the pickle juice to the pickle container
  • Use a clean spoon to remove the pickle from the container; and a dirty spoon will cause the pickle to mold
  • Be sure to pour vinegar to the size of the entire container and cover all the ingredients
