Traditional Persian Mixed Vegetable Pickles
Torshi hafte bijar, or Persian mixed pickles, is one of those pickles that can be found in the homes of the people of northern Iran. Usually, sir torshi and torshi haft bijar are staples on the table of people in the country’s north.
As a child, I always waited for the fall season to come and make pickles in the yard. The taste of this Persian Pickled is very sour.

Ingredients:
Pickled vegetables, including (tarragon, savory, mint, coriander, and parsley) | 200 grams |
pickled potatoes | 3 pcs |
Celery | a stalk |
Cauliflower | 1 medium |
Carrots | 4 medium pcs |
Cucumber | 6 medium pcs |
eggplants | 3 pcs |
Hot green peppers | 100 grams |
White or red vinegar | as needed |
Coriander seeds | 3 tablespoons |
Turmeric powder | 2 tablespoons |
Black seed | 2 tablespoons |
Salt | 4 to 5 tablespoons |
Garlic | 3 cloves |
Instruction:
1. First, we wash all the ingredients, such as cauliflower, eggplant, cucumber, and carrot. Then, we cut them into suitable sizes.
I let all the ingredients dry completely. For better drying, we take a large clean cloth, pour the ingredients on it, and put it in a colander to dry.
2. after drying, chop all the ingredients into suitable pieces.
3. Then, we chop the vegetables together in a food processor. I put it in a food processor, which is easier. I also separate the celery stalks and eat the celery leaves with the vegetables.
4. Put all the chopped ingredients in a large container, sprinkle coriander seeds, black seeds, and salt on them, and mix well with a spoon until all the ingredients are combined.
Mix all the spices we have with the ingredients.
5. We bring the container or containers that we have completely washed and dried beforehand. I use plastic containers with transparent lids and clear on the inside.
Then, we add the mixed ingredients to the container little by little.
We press them with our hands to reduce the distance between them. Then, we pour vinegar on the ingredients until the container is full.
6. Close the lid of the pickles completely so that air does not penetrate them. Place the containers in a dry and cool place away from sunlight.
After a week to 10 days, your Torshi Haft Bijar is ready, and you can drink it.
