Ingredients:

Lentils 2 to 3 cups
Lemon juice as much as needed
Medium onion 2 pcs
Tomato paste 1 tablespoon
Medium potato 2 pcs
Salt, black pepper, angelica, and turmeric powder as needed

1. You must first soak the lentils for 15 to 30 minutes before and then rinse them and put them aside.

2. After that, wash and chop the onions into slices and try to make the slices large. Of course, this is a matter of taste, and if you don’t like to feel the onions in your mouth, you can grate them. But in general, they use large sliced onions to prepare adasi.

3. In the next step, put a pot on heat and add oil to it. Fry the onions in it and let the onions become light and golden.

4. Now add salt, black pepper, and turmeric powder to the onions and let the aroma of the spices fill the kitchen. After combining the onion and spices, add the tomato paste to them.

5. After that, the tomato should be sauteed well to get its raw taste and make the food colorful. Add the lentils to the pot with four cups of water when the tomato paste is fried well.

6. In the next step, peel the potatoes, cut them finely, wash them, and add them to the pot with black pepper, salt, and thyme.

7. After this step, it is better to wait a little until the contents of the pot start to boil. Then put the pot lid on it and allow the lentils and the contents of the pot to cook well with gentle heat for 45 minutes.

8. At the end of cooking, add angelica to the pot. Add angelica, other spices, and even a little butter to this dish is completely optional. Of course, we used potatoes in this method of making lentils. For this reason, there is no need to use flour in it.

9. In the next step, when your Persian lentil soup is glazed, if you want, you can add a tablespoon of roasted flour to it. This will make your ads well-glazed.

10. Finally, after an hour, your adasi will be ready to serve. Pout it in the desired dish, decorate it with fried onion and angelica, and eat it with Sangak bread and fresh lemon.
