Ingredients :

Rib meat (thinly sliced) 2 pound
Salt (sea) one tablespoon
Black pepper (freshly ground) two tablespoons

To prepare these local Kermanshahi food ribs, we use fresh mutton, which is a combination of Lamb Flank, and mutton fillets.
1. First, according to the photo, we separate the fillet from the bone.

3. Then we separate the Lamb Flank from the bone.

4.  Next, we go to the rib and divide it into two equal parts from the middle. After that, we separate the ribs into two parts.

5. Then we pour the mixture of mutton, fillet, and Lamb Flank into the meat grinder and grind it once.

6. Grate the onion and add to the meat with salt and black pepper and knead.

7. To skewer the kebab ribs, we first skewer three to four ribs add the minced meat to the rest of the kebab as shown in the picture, and place the three kebab skewers under it.

8. Put the kebab on the charcoal and cook both sides of the kebab.
